Mesha – the flagship series of winery Tavor, created from the best wines produced in this vintage year. In this series, the winemaker is free to reveal his knowledge, experience and creativity in order to maximize the results of the wine.
In 2003, Arieh Nesher, a winery winemaker, tasted wine from an older Cabernet Sauvignon vineyard with a particularly low yield (700 kg per dunam). This wine was blended with Merlot and Shiraz grapes grown in the Galilee. The result is a wine consisting of 75% Cabernet Sauvignon, 10% Merlot and 15% Shiraz.
The harvest was late with a phenolic ripening, when the grapes reached the full extraction of aromas and smells. The wine was fermented for 12 days at 28 ° C and soaked on the peel in order to maximize the aromas and taste for four weeks.
The wine is aged in new French oak barrels from the forest of Alier for 18 months.
